The first mouthful after hunger

After a long hunger the human body is like a flawless machine starting up again. While the digestive system has rested for hours, the first mouthful does more than take the hunger away; it also sends the metabolism the message “we are starting again.” That is why the first food we put on our plate after going hungry for a long time matters far more than we imagine.

As a society we tend to reach first for pastry, for sweet things, for refined carbohydrates to silence our hunger. Yet that choice can send blood sugar climbing fast and then dropping again within a short time. In people with insulin resistance or diabetes these swings can be felt more sharply. In others, a long hunger can be followed by the signs of a sudden fall in blood sugar: weakness, trembling, palpitations, a wandering attention.

Why the walnut?

Nutritionists agree on one piece of advice: after going hungry for a long time, take care that the first mouthful is a balanced one. Foods that carry healthy fats, good protein and fibre can help digestion proceed more evenly. It was exactly this thought that led us, at Fellah Kebap, to begin setting walnuts on our guests’ tables before the meal.

The walnut is a food rich in plant-based omega-3 fatty acids, vitamin E, magnesium, copper, manganese and antioxidant compounds. Thanks to the healthy fats and the fibre it contains, it supports the feeling of fullness, can help blood sugar rise more evenly, and can help the digestive system begin the meal under better control. It is not, of course, a miracle food on its own; but it is one of the valuable pieces of a balanced diet.

A small offering, a large meaning

For us this small offering is not merely a tradition; it is also a sign of the value we place on our guests. We believe the first mouthful to reach the table should be chosen deliberately. Because a good meal must consider not only the pleasure of the palate but the needs of the body.

Every walnut we leave on the table at Fellah Kebap is a quiet but firm expression of our “health first” understanding. The true meaning of flavour is hidden not only in a well-cooked kebab, but also in the thought with which you begin that meal. We believe the first mouthful is a door opening onto health, and we welcome our guests with that awareness.
